If you are out fishing and happen to catch some fresh trout, here is a recipe to try!

Trout and Vegetables in Foil

You will need Heavy Duty Foil
4 (10 in.) trout
2 carrots
Juice of 1/2 lemon
2 small onions
Salt and pepper
3 celery ribs
1/2 tsp. thyme
4 tsp. butter

Clean trout and sprinkle inside and out with lemon juice, salt and pepper, and herbs.

(This next step can be done at home ahead of time.)
Put vegetables through food processor; mix well and strain. Sauté vegetables in butter until soft.

Stuff each fish before wrapping loosely in foil. Place in coals (or on cookie sheet in 450 degree oven) for 15 to 20 minutes. Makes 4 servings.

I am going to try to make "Pop Tarts" in my pie iron.

Here is my idea...

Two slices of buttered bread. On one side of the bread I am going to coat it with sugar. This side goes against the metal of the pie iron. I will then put strawberry jelly on the inside of the bread. Then bake!

I am hoping that the sugar melts and gets crispy on the outside and the jelly gets good and hot inside the bread!

1 Package Small Dinner Rolls, or 2 Dozen Kaiser Rolls
1 1/2 lbs. Shaved Deli Ham (or any other lunchmeat that is shaved thin)
8oz package of shredded cheese (I like mozzarella)
6-8 Hard Boiled Eggs diced
2-3 Tbsp. Mayonnaise (enough to moisten ingredients)

Combine all ingredients and fill rolls. Wrap each sandwich in foil individually, and heat over campfire for about 15 minutes.

We usually use our pie irons for dinner, but if you have a fire going in the morning, here's a quick and easy breakfast!

Ingredients:

Bacon
Egg
Cheese
Bread
Butter

Directions: Smear some softened butter in each half of the pie iron (tip: sometimes I will hold the pie iron in the fire for 10-15 seconds to warm it up so the butter melts better.) then cut your bacon strips in half and lay them in the pie iron. Set 1 slice of bread on top of the bacon. Gently pat down the bread. Crack egg onto the bread. Lay cheese over top and cover with the other slice of bread. Close and cook slowly. When the bacon is cooked, the egg inside will be cooked.

These treats are sometimes called Shaggy Dogs. All I know is that the kids love them! Just be sure you don't overheat the marshmallows or else they will burst into flames.

1 (16-oz.) package of marshmallows
1 cup of caramel syrup, heated
1 cup shredded coconut
a peeled green stick or skewer for each person.

Roast each marshmallow on a stick over a bed of hot coals until golden brown. Dip into warm syrup and roll in coconut to serve.

We stayed at Cowans Gap State Park July 14-17th, 2006. Cowans Gap is in southcentral PA near Chambersburg. It is a beautiful park with a large lake for swimming and fishing.

The park is well-run and clean. The paved roads are a bit narrow and there are some steep grades. Some of the sites are right on the road so you will want to talk to someone if you reserve a spot in the blind!

The park was closed completely a couple of years ago and they totally rebuilt the campground. The roads are all new, that sites have all been levelled with crushed stone and the bathrooms are like a luxury resort! The bathrooms are all "family" friendly bathrooms with real tile floors. The showers are the same with a men's shower, a women's shower, and a family shower where you can wash off all the kids in private!

There is electric at some sites but water must be carted in a jerry can. They have water spigots every 5-10 sites so it isn't a huge deal. There is a dump station but to get to it when you are ready to leave you have to circle back through the whole campground to get to it.

Gypsy moths have taken their toll on the trees here so many of the sites are very open. You will see moths flitting about through the day.

They have an excellent ranger program here with lots of planned activities for the kids. My daughter loved the bat show. We sat in the grass near their bat houses and watched the bats emerge at dusk! The ranger gave a very age-appropriate speech to the dozen or so kids there.

The cost for 3 nights was $48 for an electric site.

I would rate Cowans Gap State Park at 4.5/5.

We recently visited French Creek State Park, Elverson, PA (near Reading in Southeastern PA) in June 2006. The park was nice and clean and we had no problems at all. We arrived Sun and stayed until Thursday. There was not a soul around! There were at least 4 campsites all around us that were empty!

The bathrooms were clean but old. Registration was quick and easy. We paid $48 for four nights.

Our site was large and had nothing but trees behind us. There were plenty of trees between sites as well. We had full electric hookup but I had to carry water across the street in jerry cans to fill the camper. There is a dump station on site as well.

The have a nice playground for kids and two large lakes for fishing. They also have hiking and biking trials, an orienteering course, frisbee golf and a large pool. The pool does require an extra fee, though. It is not included with the price of the camping.

I would rate this park as a 4.5/5.

This discussion should center around anything to do with camping except for the topics in the other boards (pie iron recipes, foil packet meals, no utensil meals, etc.). Feel free to talk about your camper, your tent, your experiences while living outdoors, etc.

My wife got me hooked on pie irons. She loves to make what she calls "mountain pies." She takes 2 slices of bread and butters both sides of the bread (make sure you get "square" bread and not the fancy bread that you see at the grocery store. The rectangular fancy bread doesn't fit in the pie irons very well.). She puts one piece of bread in each side of the pie iron. She then spoons pizza sauce one both slices and then spreads shredded pizze cheese on the one piece of bread. Clamp the pie irons together and put it in the hot coals of the fire. One-to-two minutes per side and you have a perfect pizza! Shocked
