Barbecued Pizza Bites

Yield: 6 Pizza Bites


  • 1 4-ounce Italian pizza crust
  • 2 tablespoons barbecue sauce
  • 1/2 cup mixed chopped vegetables, such as mushrooms, scallions, and
  • bell peppers
  • 1/3 cup grated low-fat cheddar cheese
  • Chopped fresh cilantro, to taste


  1. Layer the pizza crust with sauce, veggies, cheese and cilantro.
  2. Place in covered rack and place on grill or over coals.
  3. Cook until the cheese melts.
  4. Cut into 6 slices and pass around.
